My Journey into Fermentation

The Spark

It all started with a single cabbage and a quest for authentic kimchi. I was captivated by the transformation—how simple ingredients could develop such complex flavors and health benefits.

The Deep Dive

Years of self-study, experimentation with sourdough, kombucha, and wild vegetables followed. I became obsessed with the ancient traditions and the science of the microbiome.

The Community

Sharing my creations with friends and neighbors in Jacksonville, I saw a genuine need for real, traditionally prepared foods. The positive feedback gave me the courage to turn my passion into a purpose.
